Avocado Toast with Caviar

Ripe avocados - 2
Sourdough bread - 4 slices
Lemon juice - 1 tbsp
Extra virgin olive oil - 2 tbsp
Sea salt and black pepper - to taste
Caviar - 2 oz
Fresh dill or chives - for garnish
Red pepper flakes - optional

Steps
- Toast sourdough bread slices until golden brown and crispy
- Cut avocados in half, remove pit, and scoop flesh into a bowl
- Mash avocados with lemon juice, a drizzle of olive oil, salt, and pepper until smooth but slightly chunky
- Spread a generous layer of mashed avocado on each toast
- Drizzle with additional olive oil and sprinkle with red pepper flakes if desired
- Top each toast with a generous line of caviar down the center, garnish with fresh herbs, and serve immediately
