Elegant Caviar Blini Canapés

Materials
All-purpose flour - 1 cup
Buckwheat flour - 1/2 cup
Active dry yeast - 1 tsp
Warm milk - 3/4 cup
Eggs - 2
Butter - 2 tbsp melted
Crème fraîche - 1/2 cup
Caviar - 2 oz
Fresh chives - chopped

Steps
- In a bowl, dissolve yeast in warm milk with a pinch of sugar, let stand for 10 minutes until foamy
- Mix both flours together, add egg yolks, melted butter, and yeast mixture, beat until smooth
- Beat egg whites until stiff peaks form, then gently fold into batter
- Heat a non-stick pan over medium heat, drop 1 tablespoon of batter for each blini
- Cook until bubbles appear on surface, flip and cook for 1-2 minutes until golden brown
- Let blini cool to room temperature, then top each with crème fraîche, a generous spoonful of caviar, and garnish with chives
