Materials
All-purpose flour - 1 cup
Buckwheat flour - 1/2 cup
Active dry yeast - 1 tsp
Warm milk - 3/4 cup
Eggs - 2
Butter - 2 tbsp melted
Crème fraîche - 1/2 cup
Caviar - 2 oz
Fresh chives - chopped
Steps
  1. In a bowl, dissolve yeast in warm milk with a pinch of sugar, let stand for 10 minutes until foamy
  2. Mix both flours together, add egg yolks, melted butter, and yeast mixture, beat until smooth
  3. Beat egg whites until stiff peaks form, then gently fold into batter
  4. Heat a non-stick pan over medium heat, drop 1 tablespoon of batter for each blini
  5. Cook until bubbles appear on surface, flip and cook for 1-2 minutes until golden brown
  6. Let blini cool to room temperature, then top each with crème fraîche, a generous spoonful of caviar, and garnish with chives
