Lemon Angel Hair Pasta with Caviar

Materials
Angel hair pasta - 8 oz
Unsalted butter - 2 tbsp
Lemon juice - 1 tbsp
Dry white wine - 1/2 cup
Heavy cream - 3/4 cup
Salt and pepper - to taste
Fresh chives - 1/2 cup chopped
Caviar - 2 oz
Steps
  1. Bring a large pot of salted water to boil and cook pasta until al dente, about 6-7 minutes
  2. In a large skillet, melt butter over medium heat, add lemon juice and white wine
  3. Simmer for about 1 minute, then add heavy cream and continue simmering for 5 minutes until slightly thickened
  4. Reserve 1 cup of pasta water, then drain pasta and add to the cream sauce
  5. Toss pasta in sauce, adding reserved pasta water if needed, season with salt and pepper
  6. Stir in half of the chopped chives, plate the pasta, and top with generous spoonfuls of caviar and remaining chives
