Lemon Angel Hair Pasta with Caviar

Angel hair pasta - 8 oz
Unsalted butter - 2 tbsp
Lemon juice - 1 tbsp
Dry white wine - 1/2 cup
Heavy cream - 3/4 cup
Salt and pepper - to taste
Fresh chives - 1/2 cup chopped
Caviar - 2 oz
Unsalted butter - 2 tbsp
Lemon juice - 1 tbsp

Steps
- Bring a large pot of salted water to boil and cook pasta until al dente, about 6-7 minutes
- In a large skillet, melt butter over medium heat, add lemon juice and white wine
- Simmer for about 1 minute, then add heavy cream and continue simmering for 5 minutes until slightly thickened
- Reserve 1 cup of pasta water, then drain pasta and add to the cream sauce
- Toss pasta in sauce, adding reserved pasta water if needed, season with salt and pepper
- Stir in half of the chopped chives, plate the pasta, and top with generous spoonfuls of caviar and remaining chives
